We all know the importance of attaching velocity to attack and velocity to the filter. Does anyone have any other suggestions?

WHat would be a good target for my samplers LFO's?

velocity to pitch is a classic one especialy for synthetic drum sounds, the classic velocity or envelope to pitch being common for synth-drum sounds, like those old sydrums they used to put on reggea dubs or dancehall stuff back in the early 80's.
