I am using an iMac DV for my sequencing and I want to buy my first sampler. I'm looking at the ESI 2000 but I was wondering if anybody knows if I will be able to process samples in my iMac using Recycle and send them back to the ESI 2000 if the mac doesn't have SCSI??
Is there such a thing as USB to SCSI interfaces??

Yes, there IS such a thing as a USB to SCSI adapter. It's probably your only choice other than SDS (Sample Dump Standard) via MIDI. I've used SDS with an Emax II so I know past E-mu samplers supported it - I'm uncertain whether the ESI seires supports SDS (probably do.)

I would suggest you check out http://www.entrega.com/ as a start (for USB/SCSI adapters) I'm certain there are other manufacturers who make them - probably Belkin and ADS Tech. Also, check the ESI mailing list at eGroups.com Maybe somebody there has experience with this set-up already and can adivise you whether to proceed or ditch the idea.
